Fluffy Banana Pancakes


Ingredients:
1 cup All-purpose Flour
1 cup Buttermilk *
1 1/2 teaspoon Baking Powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 egg
1 Tablespoon sugar
2 Tablespoon melted butter
1/4 teaspoon salt
3 Bananas, preferably ripened

Growing up, we all knew Bisquick, or at least had boxed pancakes at one point or another.

But what about pancakes made from scratch? Sounds like a lot of work, right? Well, actually it is quite simple, and simply delicious. In just a few easy steps and a few short minutes one can whip up some fresh and fluffy pancakes.

Up the ante and add a little flavor. Here I find yet another use for old bananas, but you could use blueberries, strawberries, cinnamon, spice - you name it.

* You could use regular milk (without too much of an impact on flavor), but the science behind buttermilk is what makes the pancake extra fluffy. Despite its name, buttermilk is not higher in fat content than most other milks, actually quite the opposite. And, buttermilk has probiotic health perks!

Directions:
Mash together the bananas in a bowl.

HINT # 1 - Do not mash completely, it is nice to have a few small chunks for texture, and personally, I think it enhances the flavor.


Add the wet ingredients - butter, buttermilk, vanilla extract and egg.  Stir to combine.


HINT # 2 - Make sure that although the butter is melted, it has cooled to room temp, otherwise you will have to temper the mixture so as not to cook the egg prematurely!

Add the dry ingredients - flour, baking soda, baking powder, cinnamon, salt, and sugar.  


Fold the dry ingredients into the wet ingredients to combine. The mixture will be slightly sticky.

HINT # 3 - Thanks to the chemistry behind some of the ingredients, the sooner you use the batter, the better.


Lightly grease a fry pan with cooking spray and place over medium heat.

Hint # 4 - Butter gets absorbed into the pancake mix. Best to use cooking spray sparingly in a non-stick pan.

Add 1/4 cup of pancake mix, depending upon how big you want your pancakes. The mixture will spread in the pan so allow for extra room.


HINT # 5 - Once the pancake begins to bubble, it is ready to flip.


Give it about 5 more minutes on the other side and serve with maple syrup. 


Yields about 8  pancakes. Yummmmm.
